Our favorite preparation was the ๐ญ๐จ๐›๐š๐ง ๐ฒ๐š๐ค๐ข. All it needed was a light sear and the beautiful melt-in-your-mouth buttery texture shone through.โฃ

What makes Hida Beef special is their thinner muscle fibers and that the marbling not only appears on the steak, but in the fat coating as well. The coating keeps the inside tender by locking the juices in when it's being cooked. Even their chuck, flank and round have this same marbling throughout. โฃ

  • Dried hida beef in the mountains! What makes Hida-gyu from Gifu so special? (1) The region that has been breeding the beef the longest is Gifu Prefecture.
(2) Beef fattened by a producer certified and registered in the farmer accreditation system of the Hida Beef Brand Promotion Conferece.
(3) Comes from a black-haired Japanese Wagyu cattle breed fattened for at least 14 months.
(4) Meat quality is rated grade 3, 4 or 5 by The Japan Meat Grading Association.
Certified only when the secretariat of the council confirms these four conditions are met.

Hida-gyu, known as one of the finest quality varieties of beef and is of the highest quality in marbling, luster, color, texture and smell. Marbling gives the steak itโ€™s unique flavour and texture properties. Sirloin is a steak cut from the loin, for one of the finest steaks, with a flavor that melts in your mouth. I can confirm Hida will never make eating a normal steak as joyful as before! We cooked this over an open flame as part of our Kaiseki experience at Shinhotakka โ€œShinzasou Onsenโ€.
