I am SOOO excited to show you these mince pie bao buns I have created with @amazonfreshuk (swipe up in my stories for the link)!!! 🎄😋🥳 You can try making them yourself by following my video tutorial which is also linked in my stories. And you can keep them plain, or go ALL OUT and try the penguin version I did! 🐧 .
I remember eating some steamed dumplings at Christmas when I was really young, and that's one of the things that really sticks in my mind. I think we tend to remember things that are just a little bit different! So I thought it made total sense to combine traditional mince pies with super soft and fluffy bao buns! 😀 Enjoy!!! 😋💖

I used royal icing for all of the decorations on this cookie. Just thinned it down with a little water to flood the outlines.

It might feel a little early to be getting into Christmas baking but Christmas fruit mince just keeps on getting better once it’s made - the flavours round out and become mellow and more complex - and for me anyway- this stuff just screams out YAY CHRISTMAS 🌲🌲🌲
I keep my fruit mince in a sealed jar in the fridge - I’ve still got some in there from last year that smells amazing.
The pastry recipe in this recipe is enough for two large sweet tarts, or lots of small ones so you can freeze some for later use. To make small Christmas mince tarts, press pastry into muffin tins, fill with fruit mince, top each with a pastry star then bake as for the big tart.

Spiced Ginger Biscuits. (Recipe below) It may only be November 14th but am in full on Christmas mode. I may or may not of already put my tree up 🎄🤫. These spiced ginger biscuits are gluten free, vegan and sugar free in honour of #worlddiabetesday They are crispy on the edge and soft in the middle with a hit of warming ginger. Using @natvialiving sweetener to keep these sugar free but just a delicious 😋
24g coconut oil
25g ground almonds
85g plain flour
20g natvia sweetener
1/2 tsp ground ginger
15g fruit syrup
1 1/2 tablespoon coconut milk
1/2 teaspoon baking powder
1/8 teaspoon salt -
In medium sized mixing bowl add almond flour plain flour, baking powder, salt, ginger and sweetener mix together.
Melt coconut oil in the microwave for 30-40 seconds.
Add coconut oil to the dry ingredients and mix to combine.
Add fruit syrup to the biscuit mix and stir to combine
Gradually add coconut milk to the biscuit mix until the mixture comes together and is no longer crumbly.
Roll out dough to 1/4 inch thickness cut out circles with a cookie cutter.
Place biscuits on a baking tray lined with greaseproof paper
Bake at 180c for 9-11 minutes until lightly golden brown on the edges.
Remove form oven and leave to cool on baking tray for 5 minutes to firm up. Then remove to crook completely on a wire rack.
Store biscuits in an airtight container for 5-7 days. -

This isn't the best looking tart (not helped by bad lighting!) but if you're anything like me then baileys just gets you in a christmassy mood! I rarely make pastry so it's one of the things I most want to improve.
Fresh off the rack and kinda obsessed with the texture of these baked ornaments. 🍪 Perfectly imperfect and I got a salt manicure while doing so. 👩🏻🍳 These (along with new stocking name tags 🧦) will be listed in the shop tonight’s stay tuned. ✨

These biscuits are buttery choc chip shortbreads, dipped in milk chocolate and topped with crunchy gold and bronze sprinkles 🎅🏻 Sound good?! I saw a similar type of thing in Sainsbury’s that is defo NOT gluten free, so I remade them myself at home (like I always do whenever I can’t eat something!!) 👌🏻 I haven’t written this one up yet but I will if you want me to! Totally exhausted this evening for some reason... even though I’ve barely left the house today. I do still struggle quite a lot with not moving much in a day, my brain goes a bit crazy and it reminds me of my eating disorder days... anyone else find when they don’t move much in a day it makes them feel bad... I can’t help it, but I hate it! 😩
