So take 15 minutes this weekend and pop this meal-prep Cilantro Lime Chicken and Lentils in the Instant Pot and you’re set for the week. That way you can go ahead and hit the snooze button. Add to the Instant Pot:⠀
2 cups dried lentils⠀
1 lb. boneless skinless chicken breasts (or thighs)⠀
3 cups salsa verde⠀
3 cups chicken broth⠀
1/2 small onion, chopped⠀
3 green onions, chopped⠀
1/2 cup cilantro, chopped⠀
3 cloves garlic⠀
2 jalapeños, diced (ribs and seeds removed)⠀
1/2 teaspoon salt, plus more to taste⠀
Cook on high pressure for 20 mins. Quick release the steam. Stir it all up and add more salsa verde as desired. Serve with rice and squeeze of lime!⠀

For me, the most essential element to the perfect fruit mince pie is the pastry. It must have a buttery, fine crumb and be of the correct thickness (4mm) – this is very important as it needs to break apart in large enough chunks so as to get the perfect mouthful of fruit and pastry. It is vital that it maintains it’s structural integrity!
I thought I would be making at least three different recipes to come to the right one, but no, got it one!
Oh, I forgot to mention the hint of cardamon, this adds a mellow flavour that compliments the fruit filling perfectly.
For the filling I used Robertson’s Traditional Fruit Mince, which is actually really good. It has the right texture and spice, but next year I will definitely work on my own filling – one step at a time!
1 jar of Fruit Mince
1.5 c plain flour
125g unsalted butter, chopped
¼ c icing sugar
1 tsp cardamom
½ tsp salt
1-2 tbs ice cold water
Sift together the flour, icing sugar, cardamom and salt
Add the chopped butter
Work the butter through the flour with a pastry mixer, this way the butter stays nice and cool.
Very slowly add little dribbles of ice cold water to the mixture and combine, or press together till it starts to form a ball.
Knead slightly to a flat disc shape and then place, covered in the fridge for 30 mins
Pre heat the oven to 190°C / 375°F
Lightly grease a tart tray.
Roll out the pastry and then press into the tray.
Spoon in a tablespoon or so of the fruit mince filling and then cover with your choice of lid.
Brush the tops of the pies with either melted butter or a beaten egg and sprinkle with white sugar.
The holidays are all about quick dinners, comfort food & doing as few dishes as possible. This dish checks off all those boxes. Simply Roasted Cauliflower Recipe
1 head of cauliflower (about 2 pounds, cut into bite size pieces)
3 tablespoons light olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Optional: squeeze of lemon
Preheat the oven to 450 degrees and place a rack in the upper middle section of the oven. Line a baking sheet with parchment paper and set aside
In a small cup or bowl, combine the oil and the spices and stir to combine. Place the cauliflower in a large bowl and pour the oil and spice mixture over it. Toss with your hands to coat thoroughly.
Spread the cauliflower across the lined baking sheet and then place in the oven
Roast for 15-20 minutes, until the cauliflower is tender, slightly crisp and browned on the edges
Remove from the oven and squeeze lemon over the top if desired. Serve hot and enjoy!
Additional: to give you more energy, can have with cooked rice, or cooked rice noodles (don’t forget to season these too!)

Too much cauliflower can cause bloating, while just the right amount provides you with lots of antioxidants and can aid in digestion. Cauliflower contains choline, a nutrient which helps with maintaining memory, something that may be useful to know during the exam season. Remember, food is fuel ❗️

Made with almond flour, coconut flour, coconut oil, coconut palm sugar(minimal impact on blood sugar), xylitol(plant based sweetener with no aftertaste) vanilla & almond extract, eggs, and pea protein milk.
HONEY LIME SALMON

1 lb. salmon, cut into 2″ cubes
sea salt and pepper, to taste
3 Tbsp raw honey
1 Tbsp soy sauce, or coconut aminos
1 Tbsp fresh lime juice
1 Tbsp avocado oil, or olive oil
fresh lime wedges
Season the salmon with salt and pepper.
In a small bowl, mix the honey, soy sauce and lime juice together, whisk to combine well.
Heat up large skillet with the oil.
Once it’s heated, add the salmon and cook for a couple of minutes. Add the honey mixture into the skillet, spooning the honey lime sauce over the salmon.
Cook for additional 6-8 minutes, until the salmon is just cooked through/flaky and the sauce is reduced a bit.
Last week we celebrated by son’s birthday so I’m a little late on posting this.
This was our first time celebrating his birthday as a family of 6. Last year during his birthday, the girls were at the NICU. But this year, he had a great time playing with his sisters, opening his gifts and eating his chocolate cupcake (recipe below)
Also, he requested for a Paw Patrol themed birthday so everything was the Paw Patrol, including his gifts 😁
Chocolate Cupcake with Maple Yogurt “Frosting”
🧁1 cup almond flour
🧁1/4 cup cacao powder, @navitasorganics
🧁1/4 cup flaxseed meal, @bobsredmill
🧁1 teaspoon baking soda
🧁1/4 cup oil, I used avocado oil, @chosenfoods
🧁1/2 cup maple syrup
🧁1/2 cup milk or unsweetened almond milk
🧁1 teaspoon vanilla extract
🧁2 large eggs
For the frosting, I combined Greek yogurt with maple syrup to taste (add more or less depending on your preference) and spread it over the cupcakes.
To a bowl, sift the dry ingredients (flour, cacao powder, baking soda, and flaxseed meal) sift to get rid of lumps. Mix with a fork to incorporate.
To a separate bowl combine the wet ingredients. Oil, maple syrup. Mix with fork. Add eggs. Mix. Add milk and vanilla extract.
In 3 batches, add the dry ingredients to the wet ingredients stirring each time.
Using a 1/4 cup measure, scoop the batter into a greased muffin pan or into cupcake wrappers.
Preheat the oven to 350F
Bake till a cake tester or toothpick comes out clean when inserted in the center of the cupcakes, about 25-30 minutes. Let it sit in the pan for 15 minutes to cool slightly, then transfer them to a cooling rack to cool completely.

-1 c.à.s beurre - 2 c.à.s miel - 200 g de fromage bleu
- 2 c.à.s de crème épaisse
- 4 brins de ciboulette
- 50 g noix
- Préchauffer le four à 180°C.
- Faire fondre le beurre avec le miel. - Couper les poires en 2 et retirer le trognon.
- Disposer les poires dans un plat allant au four.
- Napper le dessus de mélange au miel et enfourner pour 20 minutes.
- Émietter le fromage et mélanger-le avec la crème, la ciboulettes et les morceaux de noix. Saler et poivrer et travailler le mélange à la fourchette.
- Sortir les poires du four et garnir avec le fromage.
- Enfourner à nouveau 5 minutes.

South Indian cuisine has never failed to impress our taste buds with its enticing dishes. One such dish that is another epitome of this fact is, Cabbage Poriyal . Made with the tooth-some combination of cabbage, grated coconut, curry leaves and onion #recipes
4 Servings *1/2tsp mustard * 3 cup cabbage
* 2 tablespoon grated coconut
* 1 large onion
* 2 teaspoon refined oil
* 1/2 teaspoon salt
* 10 curry leaves
* 4 teaspoon green chilli
* 1 tablespoon urad dal
To begin with, wash and clean the cabbage, onion and green chilies. Then, using a clean chopping board, shred the cabbage into fine pieces. Keep it aside until needed again. Similarly chop the onion and green chilies into small pieces, keep them aside until needed again.
Now, put a deep-bottomed pan on medium flame and heat refined oil in it. Add mustard and let it crackle then add urad dal in the pan and saute it until it gets a golden brown shade.
Add chopped onion and green chilies in the urad dal mixture and saute the mixture for a minute or two.
To this onion-dal mixture, add in grated coconut followed by cabbage and salt. Saute the mixture for 5 minutes. Once done, transfer the poriyal into a serving plate. I mixed up my usual of sautéed peas and 🥓 , and 🍳 eggs. Today I added leftover sweet potatoes 🍠 from our dinner last night. Therefore, I sautéed onions and 🥓 bacon, added frozen peas and lastly the leftover sweet potatoes. Cooked my eggs 🍳 over medium and topped with Balanced Bites Bagel 🥯 Blend 😋. And added tomatoes 🍅 and scallions. It was delish... I eat some many eggs 🍳- I may turn into one! 😂
Easy plant-based lunch idea! Bean & Cheese Tortilla... Ready in 5-7 minutes. Good carbs too!
What you’ll need:
* 1 tortilla (preferably low carb whole wheat)
* 1/4 cup fat free refried beans
* 1/4 cup salsa or spicy tomato sauce * 1/3 cup grated cheese, Mex-blend or cheddar * dollop of plain Greek yogurt or light sour cream
* Optional: hot sauce & chopped cilantro
• Place tortilla on plate & spread with beans. Coat with salsa or spicy tomato sauce. Sprinkle with cheese. Cover with microwave lid or loose paper toweling & heat for 1 minute or until cheese is melted. If desired, set plate 4-6 inches under broiler for 3-5 minutes until golden & bubbly. Garnish with hot sauce, yogurt & cilantro as desired... ENJOY!!
Approximately 280-300 kcal per serving. Pair with fresh fruit & raw veggies for a balanced lunch!

HARISSA GROUND VENISON STUFFED EGGPLANT with HERBY CASHEW SAUCE + POMEGRANATE SEEDS ✨🍆 ——————————-
THIS is my new favorite way to eat eggplant. I am so pleased with this creation! You could also use ground beef instead of the venison if you prefer! The colors are also so festive for the Holidays! 🎅🏻🌲
1. I sliced a medium-sized eggplant in half and drizzled with a plentiful amount of avocado oil and seasoned with salt, pepper, and a little garlic powder. I roasted in my oven at 350 degrees for about 30 minutes. *You may need to do less or more depending on the size of your eggplant.
2. My fiancée didn’t measure out the deer meat when he sealed it up to freeze. I tried my best to eyeball the amount I used and I got the closest I could to 1 lb. of ground venison. I did have some leftover after stuffing my eggplant, but again - will depend on the size of your eggplant. I cooked the ground venison with some avo oil and salt , drained any excess liquids, and added in my Harissa paste mixture:
3. I used the @wholefoods brand of organic harissa seasoning and doubled the instructions on the back of the jar to make my paste: 2 tbsp harissa seasoning with 2 tbsp water. Mix and you have a paste to add to your meat!
4. I added the paste to my cooked ground venison and mixed together well.
5. Now for the Herby Cashew Sauce: - 1/4 cup soaked raw cashews (soaked mine for a few hours in water)
- 1/4 cup water
- 1/4 tsp red wine vinegar
- 1/4 tsp coconut aminos
- 1/4 tsp garlic powder
- A small handful of fresh parsley
- A small handful of fresh mint
- A small handful of cilantro
- Salt to taste
*Drain the water your cashews were soaking in and add all above ingredients to your blender and blend together!
6. I removed my eggplant from the oven and used a fork to scoop the insides around to make room for my meat.
7. I stuffed my eggplant halves with the harissa ground venison, topped with the herby cashew sauce, and added on some pomegranate seeds + some more chopped parsley.

Sweet potato and butternut squash curry from @nigellalawson At my Table. This vegan curry is so delicious. The sauce is so creamy, tomato-y and fragrant! My lovely husband made it for me after work and he did a great job!

Ce n’est pas le nombre de likes ni le nombre d’abonnés qui me donne l’envie de continuer, mais ce sont vos retours qui me réchauffent le cœur et qui récompensent mon « travail ».
Je suis loin d’être une experte en réseaux sociaux 🙈, mais j’essaie de m’améliorer chaque jour pour vous donner un meilleur contenu et surtout, d’être plus présente (ce qui est assez difficile la plupart du temps 😋).
J’espère que toute cette petite et jolie communauté continuera de grandir ... Qu’un jour, nous pourrons nous rencontrer autour d’un bon petit repas 😌
Une dernière petite chose (pour ceux qui me liront jusqu’au bout), profitez de votre famille, de vos amis qu’ils soient nombreux ou très peu ... car beaucoup n’ont pas cette chance.
Dans mon cas, je pense à ma famille du côté de ma mère que je ne vois plus et des personnes très chères à ma vie que j’ai perdues durant cette période.
N’oubliez pas aussi d’avoir une petite pensée envers ceux qui en ont le plus besoin.
Vous savez un petit geste comme quelque chose à grignoter ou simplement des vêtements chauds peuvent en aider beaucoup.

Je vous montre au passage ces petites COUGNOLES maison au sucre et nature de la semaine. Elles étaient si gourmandes et je suis vraiment très fière pour une première réalisation 🙈
J’ai encore des progrès à faire avec le badigeonnage (coulures trop visibles après la cuisson).
Lundi, je réalise de ma toute 1ère bûche entremet (je suis hyper excitée) et d’autres cougnoles version 500g aux raisins et au chocolat.
