We will call this a “throw way back” to last December, when I toured the vineyards of Spain. It seemed fitting to reflect on things I’m thankful for with a picture of me looking thoughtful. Although full disclosure, I was just 100% thinking about when they were going to open the g’damn wine tasting room because I had just walked up 73 steep stairs and I wanted a reward. 😂 I’m a very deep person, obvs.
But in all honesty, I am deeply thankful - I’m thankful that I lead a life full of adventure and chaos and travel and joy; I’m grateful for my amazing group of friends both IRL and in this amazing bookish community; I’m deeply thankful for my family, both given + chosen; I’m thankful for my good health and the health of all those I love so dearly; I’m grateful for my wild little furballs that insist on sleeping on my face and trying to kill me; I’m thankful that I work in a job that I love, that fulfills me and challenges me; I’m thankful for wine + coffee + tacos every damn day.
Mostly, I’m thankful that I’ve been given a life to live fully, a heart that’s open to embracing that life in all its messy forms, and a penchant for filling that life with kindness, love, laughter and pure, blinding happiness.
I’m a lucky girl.

1 16-oz. box of elbow macaroni
1/2 lb. to 1 lb. of cheese — depending on your love of cheese! (We love mixing slices of sharp cheddar and muenster.) 1/2 stick of butter
1 pint of heavy whipping cream
3 or 4 eggs
Boil the macaroni in salted water until done and strain in a colander. Melt a few pats of butter in the bottom of a casserole dish and then add a layer of the macaroni noodles. Top with slices of cheese and then dot with a few pats of butter. Repeat with another layer of macaroni, cheese and butter. Repeat if you have room for another layer.
In a separate bowl, mix the heavy whipping cream and eggs and then pour it all over the macaroni and cheese. Bake uncovered at 375 for about 20-25 minutes. Check to see if it’s done by sliding the back of a spoon down one side of the casserole. It should be congealed and not runny. If it’s still runny, bake it for another few minutes and check again.

The reality is right before we took this photo Liam threw up some milk all over my shirt. 😳😂. I did contemplate on changing but I figured this is what motherhood is all about so I should embrace 😂 My messy bun is in fact a messy bun because I’ve probably been rocking that for a few days now 🤷🏽♀️ opps. -
