Continuing my quest in trying to avoid being a "procrastin-baker" and prepping my rolled sugar cookie dough for the holidays. My favorite go-to sugar cookie recipe is Ethel's Sugar Cookies from Betty Crocker Cooky Book. It's easy to double the recipe and bakes into a nice crisp vanilla sugar cookie. Once the dough is made, flatten, wrap it well and freeze. It’s beginning to feel like the holiday season for us even though we haven’t put our tree up yet. Today we made our first batch of holiday cookies and this year was by far the most fun. The kids were having the best time cutting out the cookies, choosing colors and of course adding way too many sprinkles. These are amazing sugar cookies in the shape of an ornament ( cookie cutter available at michaels ) with cream cheese icing. I will be making another batch of these that will be available for purchase at the Le Studio Craft and bake sale in Ste Agathe Mb to raise money for the dance team on Dec 1 st. This recipe came out amazing!! These bars are the fudgy, melt-in-your-mouth type (my fav) and they’re made with such healthy ingredients. This recipe is perfect for a holiday party or just to enjoy for yourself!
🔺1/2 cup of dried cranberries 🔺1/2 cup of shredded coconut 🔺1 cup of almonds 🔺1/4 cup of soaked dates 🔺1/4 cup of almond milk
1. Combine ingredients in a food processor and mix uniform.
2. Line a baking tin with parchment paper and press the dough into the pan to form a base layer and then place in the freezer.
Almond cream layer:
🔺1/4 cup of shredded coconut
🔺1/2 cup Almond milk 🔺1/2 cup whole almonds 🔺1 Tablespoon of honey
🔺1/4 cup of whole flaxseeds
1. Mix ingredients in a food processor until smooth and then spread on top of the base layer.
2. Freeze for 1 hour.

1 flax egg
1/2 cup liquid coconut oil
1 cup unsweetened almond milk
1 tsp vanilla extract
1/2 tsp peppermint extract
1/4 cup of @barneybutter Chocolate Powdered Almond Butter 🌟🍫🥜
1/4 cocoa powder
2 1/2 cups almond flour
3/4 cup coconut sugar
3 tsps baking powder
Preheat oven to 350°
Line a loaf pan with parchment paper
Bake for 20 minutes- take out and add chocolate pieces to the top - Bake for 35-40 more minutes - Let cool for 10 minutes

It’s beginning to look a lot like Christmas, which means it’s time to go super traditional with the baking. These are Swedish “Lussekatter” and I believe everyone has their own recipe to make them. Mine are all about that fluffy yeasted dough. Some people do fillings and stuff, but for me it’s all about that dough (stuffed with raisins). My trick to making them extremely fluffy (and delicious) is:
1. Soak your saffron in some kind of alcohol (I use gin). I keep a small canister of saffron and gin in my cupboard all year long, that way I feel that you can extract more flavor.
2. Just a hint of ground cardamon adds a really nice flavor.
3. Cold milk and cold cubes butter.
4. Add one egg in your mix.
5. Soak your raisins in Rum for at least two hours before putting them anywhere near this dough.
So, this batch came out a little darker than I prefer them (still delicious though), but knowing me and my family I know I’ll be making a new batch in no time! .

Cookies, like people, come in all colors...BUT, making skin-tone icing isn’t always easy. I’ve got three tips to help you out. 🎅🏻🎅🏼🎅🏽🎅🏾🎅🏿 1. When making multiple shades, start with the darkest color, then add slowly add a little dark icing to white to create lighter shades.
2. Always stop when the icing is a shade or two lighter than you want the final shade to be. It will develop, or darken as time passes and when it dries.
3. Contrasting colors are your friend. If the color you create is looking a little rosy, add green to cool it down. If it’s leaning toward blue, warm it up with orange.

Paleo Banana Chocolate Chip Scones. Want to make something yummy for holiday guests that is #glutenfree#eggfree#dairyfree and #grainfree ?? I promise no one has to know 😉
Paleo Banana Chocolate Scones
2 1/4 cups Almond Flour
1/2 cup shredded coconut
1/4 cup coconut flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
2 Neat eggs ( or other substitute)
1/4 cup melted coconut oil
1/4 cup maple syrup
1 teaspoon vanilla
1 cup mashed bananas
1/2 cup dairy free chocolate chips
Combine dry ingredients in large bowl. In microwave or stove top melt coconut oil. Add maple syrup and vanilla.
Pour wet ingredients into dry and then add egg substitute, bananas and chocolate chips.
Place in refrigerator for 15 minutes to firm up. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
Once dough is chilled, plop on parchment paper and roll out to a flat circle, about 1 1/2 inches thick. Slice in 8 pieces, then separate on the pan.

1/2 cup #traderjoes almond butter
1/4 cup #traderjoesfinds molasses
1 tsp vanilla
1/2 cup @bobsredmill coconut flour
1/4 cup @nutiva coconut sugar
1 tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/4-1/2 tsp cloves (depending on how much spice you like!)
Combine wet ingredients and then stir in all dry ingredients. Leave in the fridge for at least an hour (overnight is ideal). Scoop & roll into balls and then drop them into a mixture of 3 Tbsp coconut sugar + 1/2 tsp cinnamon and roll to coat them. Place on a cookie sheet and bake at 350 ғᴏʀ 10 ᴍɪɴᴜᴛᴇs ᴀɴᴅ ɴᴏᴛ ᴀ sᴇᴄᴏɴᴅ ʟᴏɴɢᴇʀ!! They may appear undercooked but trust me, this timing is crucial to get that glorious chew!
