Thug Kitchen is one of my favourite cookbooks - whenever I can’t think of something to make for dinner, I know just where to look! Loved our variation of their Spring Veggie Bowl with red curry lime sauce. It was one of those meals that makes you say “I’m so full but I need to eat more...” .

What do I do with the “pulp” from making almond milk? Make cinnamon rolls of course! These are made using almond pulp and whole wheat flour. Topped with a homemade cashew cream frosting. These are super sweet but delicious. #homemadecinnamonrolls
Sometimes I just bake banana muffins for breakfast.
Do love a recipe that is so easy it can be baked on impulse: 3 bananas mashed with a cup of sugar and 1/4 of oil. Mix 2 cups of flour with 1 teaspoon baking powder and a pinch of salt. Mix in any extras (walnuts this time - but use whatever you like!) Bake at 180° for 25 minutes!

and this one is Salted Caramel Cake - this one is a vegan cake I tried it out as cupcakes for our Vegan Afternoon Tea and it went down so well I thought I would try it as large cake - also I wanted to play with my new Russian nozzles!
