  • It’s been a big year. One year ago on Thanksgiving we lived atop a slab of cement inside a cold hull. Working every day for two months to be able to sail towards home. We had a small community of friends over and cooked Thai shrimp curry. We shoved birthday cake in Luke’s face (he started it) went swimming in the ocean and had sprint races down the beach in the middle of the night. It was one of the best thanksgivings I’ve ever had. Today we are home in Michigan for the holidays after a very long journey. Just like last year, we’ve collected some strays. Shrimp curry is not on the menu but scotch eggs are. Thankful for my people. The forever constants and the new additions. People are my world and I didn’t truly recognize that until I couldn’t access any of them mid-Atlantic. I wrote long letters to friends in my head. Some of you may have received emails the length of a standard novel. I made up maid of honor speeches, eulogies, and told people things I’ve never been brave enough to say. In my experience, this was the most special thing the ocean did for me . Happy thankful day.

This is one of my favoriteee time of the years, everyone’s so happy, giving and I’m obssessed with making holiday treats like these! I made these cookies a couple weeks ago with @flapjacked protein pancakes mix and had to share!! ⁣
⁣
Protein Ginger Bread Cookie Recipes 👇🏻 super yummy & low cal! ⁣
⁣
Ingredients: ⁣
▶︎ 2 cups of @flapjacked Pancake Mix (other pancake mix, flour should work) ⁣
▶︎ 5 Tbsp butter (little less than ½ stick) ⁣
▶︎ 1 tsp coconut oil (or add a little more butter) ⁣
▶︎ ¼ cup brown sugar (212 grams) ⁣
▶︎ ½ cup molasses (8 Tbsp) ⁣
▶︎ 1 large egg ⁣
▶︎ 1 Tbsp. ground ginger ⁣
▶︎ 2 tsp cinnamon⁣
▶︎ ½ tsp pumpkin spice ⁣
▶︎ ½ tsp vanilla extract ⁣
▶︎ ½ tsp. Salt ⁣
▶︎ 1 tsp. Baking soda ⁣
⁣
⁣
Directions: ⁣
1️⃣ In a large bowl (hand mixer is optional) beat butter, brown sugar and molasses until fluffy (about 60-90 seconds). Add the egg and beat until fully mixed 
NOTE: make sure butter is softened NOT fully melted ⁣
2️⃣ In a separate bowl whisk the pancake mix, spices, baking soda and salt. Gradually mix both bowls in together (wet and dry ingredients) but don’t overmix! ⁣
3️⃣ Wrap the dough in plastic wrap and let chill in the fridge for 2-3 hours. DON’T SKIP THIS STEP! ⁣
4️⃣ Preheat the oven to 350 degrees and line the pan with parchment paper. Cut out the gingerbread man shapes and place onto a baking sheet. ⁣
5️⃣ Bake for about 8-10 minutes (keep an eye on them). Let cool for about 5 minutes. Then Decorate! ⁣
Nutritional Information: ⁣
Macros for 1 cookies (without frosting): 4P / 11 C / 3 F = about 90 calories ⁣

  • Yesterday we arrived in Tupelo Mississippi. The birthplace of Elvis Presley, some of the best sweet tea you’ll ever drink, magnolia trees and Southern Style Homes. This one belongs to Papa Olson aka my Father in Law.
Love his front porch and the warm welcome home we received.
Still celebrating Thanksgiving with a big old grateful ❤️!

It takes a heap o' livin' in a house t' make it home,
A heap o' sun an' shadder, an' ye sometimes have t' roam
Afore ye really 'preciate the things ye lef' behind,
An' hunger fer 'em somehow, with 'em allus on yer mind.
It don't make any differunce how rich ye get t' be,
How much yer chairs an' tables cost, how great yer luxury;
It ain't home t' ye, though it be the palace of a king,
Until somehow yer soul is sort o' wrapped round everything.

Home ain't a place that gold can buy or get up in a minute;
Afore it's home there's got t' be a heap o' livin' in it;
Within the walls there's got t' be some babies born, and then
Right there ye've got t' bring 'em up t' women good, an' men;
And gradjerly as time goes on, ye find ye wouldn't part
With anything they ever used — they've grown into yer heart:
The old high chairs, the playthings, too, the little shoes they wore
Ye hoard; an' if ye could ye'd keep the thumb-marks on the door.

Ye've got t' weep t' make it home, ye've got t' sit an' sigh
An' watch beside a loved one's bed, an' know that Death is nigh;
An' in the stillness o' the night t' see Death's angel come,
An' close the eyes o' her that smiled, an' leave her sweet voice dumb.
Fer these are scenes that grip the heart, an' when yer tears are dried,
Ye find the home is dearer than it was, an' sanctified;
An' tuggin' at ye always are the pleasant memories
o' her that was an' is no more—ye can't escape from these.

Ye've got t' sing an' dance fer years, ye've got t' romp an' play,
An' learn t' love the things ye have by usin' 'em each day;
Even the roses 'round the porch must blossom year by year
Afore they 'come a part o' ye, suggestin' someone dear
Who used t' love 'em long ago, an' trained 'em jes t' run
The way they do, so's they would get the early mornin' sun;
Ye've got t' love each brick an' stone from cellar up t' dome:

  • Home visiting family for Thanksgiving.  Back in August this pond scene was full of flowers and today, not so much. Just a beautiful planter filled with holly berries and leaves. Hope you all spend the holidays with those you love.
