this vegan PEANUT BUTTER PUMPKIN PIE is the only pie recipe on the blog and probably the only pie i will ever continue to make and crave over and over again🎃🥜☺️it has a pecan cookie crust made with 2 ingredients and is filled with a peanut buttery pumpkin filling made with 4 ingredients💯it’s all gluten-free, dairy-free, grain-free and low in sugar... oh and did i mention it’s a no bake recipe?!👌🏻seriously so easy for anyone intimidated to make pie usually (aka me) search “peanut butter pie” on the blog for full recipe!

I made this again and it's so much better than before. After a few tries it now has a perfect texture. When I made it before I used 3 tbl agar agar. This time I used just 1tbl and it was just right. I also added the agar agar in with everything else and cooked it all on the stove, instead of boiling it on the side and dumping it in. Live and learn, right?
1 can of pumpkin
2 cups coconut milk. You could probably use almond or cashew but I like this one
2 tsp pumpkin pie spice
1/2 tsp ground ginger
1 tsp vanilla extract
1 package sugar free cheesecake pudding mix
1 tbl agar agar
Dump it all in a pan and mix well. Cook on medium heat until it starts to boil, stirring constantly. Heat through a little longer. I didn't pull it off at a slight boil, I waited until it gradually bubbled up a bit more.
Pour into a small bowl. I have a five inch casserole and it fits nicely. Chill for a couple of hours until it's firm.
This has a nice, thick pudding texture but stands up on its own. Creamy texture, not rubbery, like the first time I made it with triple the agar agar.
I didn't add any sweetener as the pudding mix added plenty of sweetener.
Thanksgiving is coming up, which is why I’m already dreaming of pumpkin pie. My dad used to bake the best pies and he made a lot so that we could take some home. I’m still waiting for the day that I can make one as good as his. Anyway, I’ve been thinking about the typical Thanksgiving meal and I’m wondering if there are any hidden benefits. I know there are plenty within the vegetables and herbs. But, what about pumpkin pie? We use canned pumpkin puree to ease the stomach of our dog. Due to its high fiber content, it aids digestion. This seems to be common practice for pets, but for whatever reason, it’s not for humans. Could ending a big meal with pumpkin pie do more than satisfy our taste buds?
Fun fact: Pumpkin pie used to not have a crust. Instead, a whole pumpkin was hollowed out and baked with the filling inside. So much simpler!

These past weeks I’ve been surviving off of protein bars and feel so bad that I haven’t been cooking as much as I should. 9 days until Thanksgiving! Tonight I'm featuring this recipe for Marshmallow Pumpkin Pie. I'm not trying to sound mallow-dramatic, but this is one of the easiest and tastiest pies I've ever made.
Let me clear something up—even though it contains pumpkin, it is not pumpkin pie in the traditional sense. It’s much lighter, and the pumpkin flavor is subdued. Several people have told me they don't like pumpkin, but they love this pie.

I love taking photos. Ever since I was young (I mean, I’m STILL young, but I’m talking middle school age here 🤣), it was rare that I wouldn’t have a disposable camera in hand whether it was for youth trips, Lutheran middle school camp, family holidays and weddings, high school dances, Homecoming week activities, you name it!
I have always had a passion for capturing moments on film that I never wanted to forget (my dad’s the same 💕). And poor Jude has all those photos boxes stored under his bed, which makes it quite hard to shove any of his crap under there 😆 I even have a box filled with pictures of just Cam 😳 (I know, don’t judge 🤦🏼♀️😻). But when Adam caught this moment of me, capturing my most precious gifts, my children, I couldn’t help but look back on it and smile. He caught me doing what I enjoy so much: not just taking photos, but witnessing and observing moments when my kids are loving the sh*t out of life! Watching them is so pure and so freeing because they are so pure and so free!
They’re not worrying about the way they look when they’re running around half naked! They don’t care that their hair is crazy or that they still have food in the corners of their mouths. They have no issue with bluntly and truthfully expressing when they are not pleased. And they have no problem showing gratitude when the lake water is the right temperature or the pebbles at their feet are so shiny. Those kids are LIVING in the moment. It doesn’t matter to them what happened yesterday. They sure as hell aren’t worried about tomorrow. And if their hotdog falls in the sand they’ll brush it off and eat it.
That’s what I want. That’s what I miss. That is something to strive for: being fully present in the moment.
I am so aiming for this for the upcoming holidays as well. I want to be 100 percent absorbed in my kids’ laughter, the sparkle in their eyes, the feel of their soft hair under my chin when they’re so tired but still won’t admit so. I want to watch them put way too much whip cream or ice cream on their pie (it’s actually never too much 🤷🏼♀️) and then wait for a tiny scolding, even though I’ll let it slide. ***continue reading in comments***
