800 g di patate crude già pulite
150 g di pangrattato
2 cucchiai di Pecorino o altro formaggio a piacere
rosmarino secco q.b.
peperoncino in polvere facoltativo
sale e olio q.b.
300 g di provola a fette

----- PROCEDIMENTO -----
.
Puliamo le patate e tagliamole a fette sottilissime con una mandolina. Le mettiamo in una ciotola piena d'acqua fredda e lasciamo riposare per 10 minuti circa. In questo modo perderanno un po' di amido, non diventeranno scure e dopo la cottura saranno belle croccanti.

In una ciotola prepariamo il pan grattato e lo mescoliamo con rosmarino secco e il pecorino. Consiglio di aggiungere anche un po' di peperoncino in polvere, ma questo passaggio è facoltativo.

Prepariamo una tortiera rotonda apribile da 24 cm di diametro e ungiamo il fondo e le pareti con olio di oliva. Distribuiamo il mix di pan grattato sul fondo.

Scoliamo le patate a fette e iniziamo a distribuirle una per una sul fondo per formare il primo strato. Saliamo e aggiungiamo uno strato di mix di pan grattato, olio di oliva e qualche fetta di provola.

Formiamo un secondo strato di patate e procediamo così fino ad usare tutti gli ingredienti. Inforniamo a 180° per 50 minuti circa. Al termine la sfogliata di patate sarà croccante in superficie.

Lasciamo intiepidire qualche minuto e apriamo la tortiera.
Tagliamo a fette la millefoglie di patate e serviamo calda. Provatela anche voi! 😉

Ingredients:
Crust: *  1 1/4 cup pecans (or nuts of choice) *  1/4 gluten free rolled oats *  2 tbsp almond butter *  6 dates *  3/4 tsp cinnamon, optional

Filling *  1 cup store bought vegan eggnog (240ml)* *  1/4 cup lemon juice (60ml) *  1 19 oz package extra firm tofu (532g)* *  1 cup cashews, soaked in hot water for 15 minutes (120g) *  1 cup coconut OR cane sugar (200g)* *  1 tbsp vanilla *  3 tbsp arrowroot starch *  OPTIONAL: 3/4 tsp nutmeg, 2 tsp nutritional yeast, 1/2 tbsp miso paste

INSTRUCTIONS  1.  Preheat oven to 350 F (180 C). Line a 9 inch springform pan with parchment paper or spray with oil.
 2.  Into a food processor, add in the nuts and oats and process until grounded. Then add in almond butter and dates and blend until a dough forms. Press the dough into the springform form. Use the back of a measuring cup or a flat potato masher to press flat.
 3.  Bake in the oven for 10 minutes. Reduce temperature to 325 F (160 C). 4.  In the meantime, add all the filling ingredients into a high speed blender. Taste and add more spices and sugar to taste. Pour the filling into the springform and then bake in the oven for 40-45 minutes.
 5.  Let it rest at room temperature until cool (around 20 minutes). Then place into the refrigerator to cool for at least 4 hours- preferably overnight.
 6.  Carefully remove the cheesecake from the springform pan. The parchment paper should make removing it easy but if there are any sides of the cheesecake stuck to the springform, use a thin knife to cut between the pan and the cheesecake.
 7.  Serve with coconut whip cream or caramel sauce and enjoy!
 8.  Store any leftovers in the refrigerator, covered for 3-4 days. #bestofvegan

1 ½ cups shredded cheddar cheese (150 g), divided
1 teaspoon salt, divided
½ teaspoon pepper, divided
1 tablespoon olive oil
6 eggs
1 cup broccoli (150 g), chopped
1 tomato, diced
1 small onion, diced
2 tablespoons half & half

Preparation
Preheat oven to 350˚F (180˚C).
In a bowl, add broccoli, potatoes, 1 cup (100 g) cheddar, ½ teaspoon salt salt, and ¼ teaspoon pepper. Stir to combine.
Grease a 9-inch (23 cm) nonstick tart pan with olive oil. Pour the broccoli mixture into the pan. Press evenly into the pan and the sides of the pan until firm using a measuring cup.
Bake for 45 minutes until the potatoes begin to brown.
In a bowl, mix together the eggs, broccoli, tomatoes, onion, remaining cheddar, half-and-half, and the rest of the salt and pepper.
Pour the egg mixture into the cooked crust. Bake for 25 minutes until eggs are firm.
Let cool, then serve.

Ingredients (for 4 servings)
1 lb sirloin steak (455 g), about ½ inch (1cm) thick
salt, to taste
pepper, to taste
2 tablespoons oil
2 hearts romaine lettuce, chopped
3 hard-boiled eggs, diced
2 avocados, diced
2 cups cherry tomato (400 g), halved
3 tablespoons caesar dressing

Preparation
Salt and pepper the steak on both sides, being sure to rub in the seasoning.
Heat the oil in a pan over high heat until slightly smoking.
Sear the steak for about 2 minutes per side.
Rest the steak on a cutting board for 10 minutes.
Slice the steak.
In a large bowl, combine the lettuce, eggs, avocados, cherry tomatoes, steak, and dressing.
Toss the salad until evenly coated and serve.
Enjoy!

  • Winter has officially arrived here and ground beef was 2.99/lb so it seemed natural to make a huge pot of chili this weekend...note to self though: my crockpot can't handle a triple batch 😜

I follow the recipe from @peaceloveandlowcarb (google peaceloveandlowcarb slow cooker chili)...it has a handy feature that automatically doubles or triples the ingredients in the batch for you to make it fail proof!  I omit the jalapenos and usually add a few cans of beans (swipe to see brand) but my husband said no beans this time so I used cubed mushrooms to add some different texture and it came out amazing!! .
One tip I came across by accident this weekend is that crushed tomatoes have a lot more carbs than diced, so buy the tomatoes with the fewest carbs on the label (I find the no salt added diced to be the lowest across all the brands) and puree them with an immersion blender to it the texture you desire.

no idea what the macros are as it will depend on all the the specific things you add to yours and we don't track (just watch portion sizes for these types of comfort foods) but if you want to calculate your own, just add up everything you put in the pot, weight it, and divide by the number of portions you want it to be.

I vacuum seal mine into a few servings and freeze for an easy meal.

Those beans are generally found in the organic isle in grocery stores but I usually buy mine through @naturamarketca..if you are in Canada and haven't ordered from them before, the link in my profile will give you $10 off and me $10 to spend as well!

So on Sunday I attempted my first ever batch of cinnamon buns ~ along with the help of my trusty bestie and my fiancé 💓 
Ive wanted to make these myself for SO long seeing as the shop-bought, ready made versions come with a MOUNTAIN of unnecessary plastic and I have to say, they tasted DELICIOUS and turned out WAY better than I expected {albeit photographing them proved tricky 😂 but the photos will never do these justice anyway imo}
One thing I will say is that they were pretty exhausting so starting early evening wasn’t the smoothest move.. Next time I will most likely make the dough the day before - as this will give myself some time to gather energy and not be so exhausted {ME/CFS life am I right?!} but also will allow for the dough to prove for as long / best it can!
I’m excited to trial and experiment with a few more recipes & methods and eventually come up with my own foolproof recipe for the blog ~ so if you love cinnamon buns then watch this space 🤤
Best served immediately after baking, that is, depending on how long you can bare to wait for them to cool 🙈

  • В продолжение прошлого поста. Хоть сахар и в норме, но эндокринолог настоятельно рекомендовал исключить из рациона магазинные сладости, так как количество простых углеводов в них зашкаливает. А именно за углеводами нам нужно пристально следить. Так что в ближайшее время я буду жить на кухне. Ведь от печенек и кексиков никуда не уйти. Вот вариант молочного ломтика. Не буду утверждать, что он похож по вкусу на оригинал, но детям понравилось. Смели в момент. А это самый главный показатель. 
Отруби овсяные - 3ст.л., 2 яйца, 50мл воды, 1ч.л какао, 2ч.л. сухого молока, 1/2ч.л. разрыхлителя, подсластитель или сахар по вкусу. 
Все смешиваем до однородности, выкладываем в форму и в разогретую духовку при 180градусах выпекаем до сухой зубочистки (примерно 15-20 мин). Охлаждаем и разрезаем на 2 части.
Готовим творожную прослойку. 
15г желатина распускаем в 100г горячего молока. 150г мягкого творога, 150г натурального йогурта, ванилин и подсластитель/сахарную пудру пробить блендером. Влить желатин, еще раз взбить до воздушности.
Приступаем к сборке.
Дно формы выстилаем фольгой, укладываем половину коржа и формируем достаточно высокий бортик. Выливаем начинку, накрываем вторым коржом. Убираем в холодильник до полного застывания. Я оставила на ночь.
Достаем и разрезаем на порции.

  • В продолжение прошлого поста. Хоть сахар и в норме, но эндокринолог настоятельно рекомендовал исключить из рациона магазинные сладости, так как количество простых углеводов в них зашкаливает. А именно за углеводами нам нужно пристально следить. Так что в ближайшее время я буду жить на кухне. Ведь от печенек и кексиков никуда не уйти. Вот вариант молочного ломтика. Не буду утверждать, что он похож по вкусу на оригинал, но детям понравилось. Смели в момент. А это самый главный показатель.
    Отруби овсяные - 3ст.л., 2 яйца, 50мл воды, 1ч.л какао, 2ч.л. сухого молока, 1/2ч.л. разрыхлителя, подсластитель или сахар по вкусу.
    Все смешиваем до однородности, выкладываем в форму и в разогретую духовку при 180градусах выпекаем до сухой зубочистки (примерно 15-20 мин). Охлаждаем и разрезаем на 2 части.
    Готовим творожную прослойку.
    15г желатина распускаем в 100г горячего молока. 150г мягкого творога, 150г натурального йогурта, ванилин и подсластитель/сахарную пудру пробить блендером. Влить желатин, еще раз взбить до воздушности.
    Приступаем к сборке.
    Дно формы выстилаем фольгой, укладываем половину коржа и формируем достаточно высокий бортик. Выливаем начинку, накрываем вторым коржом. Убираем в холодильник до полного застывания. Я оставила на ночь.
    Достаем и разрезаем на порции.

  • I was talking to a family member who said that they had bought someone new kitchen gadgets each year that had gone unused. Unused?! How could they?! Then he told me what it was that he had purchased. I understood. The fancy, expensive gadgets were just that. They were $100 fancy replacements for basic tools in the kitchen. Space taker uppers. Sink fillers. One more expense if it breaks. I explained this. He understood. He will buy another this year for that person. It will sit in a closet. I will explain this again. The cycle will continue on forever. 
My husband had to beg me to buy an $18 set of beaters. I can mash potatoes, whisk eggs, and knead my own dough. I don’t need to spend money on things I’m perfectly capable of doing myself. He insisted. I love them. I cannot stand when he’s right. Which is always by the way. The whole mantra of the wife being right does not apply to our marriage. Our marriage involves me being Lucy from “I Love Lucy”. My spastic ways are entertaining at times, but I ultimately turn to my husband when I’ve discovered the mess I’ve created out of thin air for myself. •

  • I interrupt your regularly scheduled breakfast to bring you this easy and amazing Spinach Quiche. 
#recipe 👇 
Preheat oven to 350
Ingredients:
9-inch deep dish pie shell
4 T. butter
1 onion, finely chopped
9 oz. fresh spinach
2-2.5 C. grated swiss cheese
2 whole eggs, plus 2 yolks
2/3 C. heavy cream
1 t. Dijon mustard
salt and freshly ground black pepper
Directions:
Place pie shell on a sheet pan. Prick bottom of crust with fork. Place foil in crust and fill with rice, dry beans or pie weights. Bake crust for 10 minutes. Remove foil and beans (I keep a jar of dry beans in my pantry just for this and I reuse them constantly). Melt butter in large pan. 
Saute onion until slightly golden. 
Add spinach to onions in pan and continue cooking until spinach is wilted. 
Mix all ingredients together and pour into baked pie shell. 
Bake for 25-30 minutes, until top is golden. .

1. Sift together the dry ingredients: flour, baking soda and salt and set aside. ⠀
2. Cream the butter, peanut butter, sugar and brown sugar, then add egg, milk and vanilla and beat well. ⠀
3. Gradually blend in dry ingredients and mix thoroughly. ⠀
4. Shape the dough into balls using a rounded teaspoon-full for each. ⠀
5. Roll balls in sugar and place on a greased baking sheet. 6. Bake in oven at 375 degrees for 8 minutes. ⠀

Ngobrol sebentar ya, kalau dibuat tingkatan ikan dari yang paling saya sukai, jawabannya ini nih, kalau teman2 paling suka ikan apa ?

Yang lain saya suka juga, tapi biasanya kalau kepasar selalu cari ikan2 yang diatas dulu baru klo ga ada yg lain jg gpp asal laut 😁, Salmon tp ga setiap kepasar ya, bangkrutttt... 😂

Nah kali ini saya cobain ikan mas, pertama kali megang tuu geli banget teksturnya licin2 gimana gtu ya, trus nyoba dimasak pesmol, dan hasilnya enakkk, emang namanya ikan pasti enak sih 😋.

Selama ini yang pengen buat pesmol tp takut susah dan ribet? Gakkkk sama sekaliii, ditonton yaaa trus dicoba, karena ini mudah dan enak banget. ☺️

Bahan :
500 gr ikan mas (diberi 2 sdt garam dan 4 sdm air asam, didiamkan sekitar 5 menit, kemudian digoreng kering)
Daun Jeruk
Daun Salam
4 cm lengkuas dimemarkan
2 bh wortel dipotong korek api
Cabai rawit merah (opsional)
.
Bumbu Halus :
4 siung bawang putih
5 bh bawang merah
5 bh kemiri
4 cm kunyit
3 cm jahe
.
Bumbu Kuah :
250 ml air
Garam dan gula secukupnya

  • Holiday Magic Brownie Bars

Brownie Layer:
1 1/2 c. semi-sweet chocolate chips
1/2 c. butter
1 c. sugar
2 egg + 1 yolk
1 c. flour
½ t. vanilla
Toppings Layer:
1 c. nuts, divided
1/2 c. mini Holiday M&Ms, divided
1 c. regular Holiday M&Ms, divided
1 c. semi-sweet chocolate chips, divided
1 1/4 c. sweetened flaked coconut
1 - 14 oz. can sweetened condensed milk
1/4 cup holiday sprinkles

Preheat oven to 350 degrees F.
Place butter and chocolate chips in a large, microwaveable mixing bowl. Microwave butter and chocolate chips for 30 seconds. Stir, and continue microwaving and stirring in 30 second intervals until chocolate is melted. Beat in sugar, then vanilla and eggs, until well combined.
Stir in flour until just combined. Pour into a well greased or foil lined 13 x 9" baking dish. Bake at 350 deg. F for 20 minutes. Remove from the oven and sprinkle on nuts , half of the chocolate chips and M&Ms, then shredded coconut. Pour sweetened condensed milk evenly over the top. Spread gently to make sure it is evenly distributed. Sprinkle on remaining chocolate chips, M&Ms, nuts and finally the sprinkles. Bake for an additional 25 minutes, or until the edges are golden and the middle is set and just starting to brown.
Cool completely before cutting into squares with a sharp knife.

Yield: 12 - 16 servings

I cooked organic oats, added in vanilla beans from 1 bean, a tsp of maple syrup, a tsp of cinnamon and topped it with frozen berries because it’s quick and easy to add to the hot oatmeal, it literally defrosts right away and cools the oatmeal so I don’t have to wait to eat it!     Segundo año que tenemos Corona de Navidad 100% comestible. .El año pasado tuve una corona de galletas de mantequilla pintadas a mano con grasa real.(Te La Enseño En Mis storyes) Este año pensé en cambiar los ingredientes y hornear una corona de merenques. ¿OS gusta ?

These are hella easy and sooo lush 😋 You can change the white choc chips for nuts or milk choc chips. To be honest, you can add any dry chipped or finely diced food into them. Recipe down below 😁 .

Ingredients:
225g Self Raising Flour
125g Soft brown sugar
150g Butter 
125g Caster Sugar
1 tsp. Vanilla Extract 
1 Egg
A pinch of salt 
200g White Choc Chips

Recipe:
1. Preheat the oven to 180°C, gas mark 4
2. Cream butter and sugars, once creamed, combine in the egg and vanilla.
3.Sift in the flour and salt, then the chocolate chips. Roll into walnut size balls, for a more homemade look, or roll into a long, thick sausage shape and slice to make neater looking cookies. 
4. Bake for 10 minutes until just golden round the edges. Take out of the oven and leave to harden for a minute before transferring to a wire cooling rack. These are great warm, and they also store well, if they don't all get eaten straight away!
