My mom didn't make this at home as much when growing up but she did make it at her restaurant. One of my memories was my family would purposely drive 20 miles to a small Korean town to eat at a particular restaurant that specializes in Soon Dubu. I often got mild spicy as a kid since I couldn't handle the heat. The restaurant served chilled water kimchi as a side dish and I would dilute the spicy levels and cool down the dish by mixing it together. I would giggle and tell my parents to try my new special recipe and that it tasted much better than a regular tofu dish since it was a fusion with water kimchi juice 😂. I would crack my egg into the soup while the dish was still simmering and wait for it to become perfectly soft boiled. My brother and I would compare and compete who would have the best cooked egg. Sometimes I would get it with shrimp and my mom would hand pick the shells off for me and placed the meat on my spoon before I took my next big bite. I  purposely did not eat the white rice because I was more excited for the Nurungji - roasted rice that came after. My mom would always laugh and say, "you are in fact your father's daughter" since my dad did the same. .

🔍The Master Spicy Noodle

People say it’s the best dry noodles in Taipei so we decided to give a try, waited almost an hour to get in, tables are small and very close to each other.
Got both spicy/non-spicy set, for me noodles did better job than soup, the noodles were chewy, flavorful and big portion.
However, kinda disappointed with the soup, it was salty and they put sliced beef in it instead of stewed beef, I thought sliced beef is for hot pot lol.
The spicy tofu was good but I love spicy duck blood(very rare in state!) the most, soft and very tasty. Tbh I had high expectation before visiting, sadly it just not really worth the hype.

等了大概有一小時 才成功進入店內 
發現裡面座位好小 桌距近到可以聽到鄰桌聊天的一切
點了麻辣和清燉套餐 桌面就完全沒空間了~
Q彈的麵條很有嚼勁 滿滿的麵量配上溏心蛋💯
相比之下半筋半肉湯讓我有點失望
以為是塊狀牛肉結果是牛肉片 牛肉片不是放火鍋的嗎!
湯略鹹 而且沒有什麼記憶點🤣
不過麻辣老豆腐跟滷鴨血都好吃
特別是鴨血(很稀有在美國🥺)軟嫩又入味
老實說在來訪之前對此店有很高的期待
但是吃完後覺得沒有傳聞中厲害~

  • According to my non scientific survey, Chuminh’s bubble teas have the least amount of sugar of anywhere else in Seattle, so they get my vote. The Spicy Tofu and BBQ Pork Báhn Mís are their two most popular sandwiches and will run you about $6 a piece at the moment. Chuminh is a hole in the wall kind of place that is loved by many. If that is not your jam, Loving Hut is within a stone’s throw on the other side of the street. 🇻🇳 Cards on the table: we are Vietnamese cuisine and travel enthusiasts. Living so close to our city’s Little Saigon is a treasured gift. If you ever find yourself in Vietnam, definitely consider visiting one of our favorite vegan restaurants on the planet: @minhhieniiivegetarian, in the beautiful city of Hội An. You will find love notes from all over the world pressed under the glass of their tables. It is where I learned to make Đậu hũ nướng lá chuối (grilled stuffed tofu wrapped in banana leaves) - a dish you can order right here in Seattle at Chuminh, minus the banana leaves. 💚

Another amazing recipe from Tribal Wellness Movement- an online health portal that offers healthy recipes, workouts, yoga, Pilates, meditation, nutritional support.

1 block firm tofu
3 carrots 
1 onion, diced
2 cloves garlic 
2 tbsp olive oil 
1 tbsp grated ginger 
1 tsp cumin
1 tsp turmeric 
1 tsp coriander 
1 tsp garam masala 
1 tsp chili powder
Small tin diced tomatoes 
Coconut milk
sliced tofu into nice thin strips. Sliced carrots thinly, brush with oil and roast both in oven 300 Fahrenheit for 15 minutes
sauté onions ginger garlic and oil in a pan for a few minutes. Add spices add tomatoes and cook for five minutes. Add in remaining ingredients cook for another 10 minutes ensuring tofu is cooked through
(I didn’t have any coconut milk so I just left it out and it worked fine)

  • Hello! Sometimes I take “Instagram breaks” and I was going to go thru the rest of the year but tbh I missed my cooking page!! 👩🏽‍🍳👩🏽‍🍳 This is my spicy turmeric tofu noodle soup 🍲 I am trying to go pescatarian (with a few exceptions) so this was my take on a chicken noodle cuz I was sick after Thanksgiving:( 1. Cook half a yellow onion, about 4 stalks of celery, minced garlic, and a handful of Trader Joe’s shredded carrots in oil until tender and translucent.
2. Now add spices! I added turmeric, garlic, onion, tyme, oregano, s&p. I used extra turmeric because its a powerful healing spice (1tbsp or more tbh)
3. Now add your veggie broth! About 2 QTs
4. Bring that up to a low simmer, then add about 2 cups (uncooked) of your noodle choice. I chose Trader Joe’s veggie radiatore!
4. Bring to a roaring boil so the pasta can cook (8-10min)
5. Now add some protein! I used some extra firm organic tofu that I previously dried out (wrap it in a towel and set a heavy weight on it for 30min)- you could also add some rotisserie chicken 
6. The final touch- SPICE. I added about 2tbsp of Trader Joe’s green dragon sauce and a healthy amount of red pepper flakes so I could sweat out my cold. 💕💕💕let me know if you decide to make this soup or add a twist of your own!   • •FIERY KOREAN TOFU 🔥•.This one is especially for all of you that want a dish with a real kick 🌶. All you need is some gochujang, which I’m pleased to say is now available in most supermarkets and not just specialist shops 🙌. It’s a fermented red chilli paste used in Korean cooking (and it keeps really in the fridge). I’ve paired it with ready prepped veg from @ocadouk because sometimes you just have to take shortcuts 🏃‍♀️ right? Want the recipe?

Recipe
400g firm tofu; drained, pressed and chopped into cubes and dried thoroughly.
2 tablespoons cornflour
1 tablespoon honey/maple syrup
1 tablespoon rice vinegar
1-2 tablespoons gochujang (depending on how spicy you like it)
Splash of water
..
1. Toss the tofu in the corn flour.
2. Heat a non stick pan and add a tablespoon of oil. When hot, add the tofu and cook on a very high heat until crispy on all sides.
3. While the tofu is cooking, add the rest of the ingredients to a small bowl and whisk to combine. Pour into the crispy tofu and allow to bubble for a few minutes till sticky. Add a splash of water if too thick. If you are adding veggies in, just lightly steam them first and then throw them in at the end and stir fry for a minute or so. Sprinkle over some sesame seeds and chopped spring onions.

Pagi ini buka kulkas zonk isinya cuma tahu dan cabe ijo 😄😄😄 kebetulan ada sisa sambal terasi waktu makan ayam gepuk kemarin (sambalnya bikin sendiri ayamnya beli jadi) 😆😆 goyang seet seet seet di dapur sebentar langsung deh jadi hidangan sederhana dimakan sama nasi, rempeyek dan kerupuk tak mengapa..Kan hemat pangkal kaya sodara sodara

TAHU KUAH SANTAN PEDAS by @regunancha

Bahan:
10 buah tahu potong potong 
3 sdm sambal terasi
10 buah cabe hijau rajang serong
Cabe rawit hijau utuh sesuai selera
1 ruas lengkuas geprek
3 lembar daun salam
garam, gula, kaldu jamur bubuk sesuai selera
65 ml santan instan campur 500 ml air
500 ml air
Minyak untuk menggoreng dan menumis secukupnya

Cara Membuat:
1. Beri bumbu tahu dengan garam lalu goreng hingga kuning kulitnya. Angkat tiriskan. 
2. Tumis sambal terasi bersama lengkuas serta daun salam lalu masukkan tahu, aduk rata dan tumis sebentar. 
3. Tuang air dan biarkan mendidih lalu tuang air santan, aduk aduk beri bumbu garam, gula dan kaldu bubuk. 
4. Tambahkan cabe besar dan rawit hijau. Masak hingga bumbu merasuk ke dalam tahu. Angkat dan sajikan

Note: boleh pakai sambal terasi botolan
